About the course

Are you working in a catering establishment and looking for a way to gain new skills or improve current ones? City of Bristol College's Chef Apprenticeship could be the answer. The course teaches a variety of preparation techniques. You will also have the opportunity to take part in competitions. Each week you will spend the equivalent of four days in the workplace and one day in College.

Entry Requirements

  • Employment in an industrial kitchen as an apprentice, a minimum of 30 hours a week
  • 2 GCSEs grade D or above
  • Excellent record of attendance and punctuality
  • Good communication skills
  • Commitment, enthusiasm and the motivation to succeed
  • To complete an online initial assessment
What will I do on this course?

The course is a combination of theory and practical sessions. You will learn and practise your skills in our fully equipped kitchens at College and also in the workplace.Mandatory modules:

  • Maintain a safe, hygienic and secure working environment
  • Maintain, handle and clean knives
  • Work effectively as part of a hospitality team
  • Maintain food safety when storing, preparing and cooking food

Examples of the optional units include preparing, cooking and finishing basic:

  • Fish dishes
  • Poultry dishes
  • Meat dishes
  • Vegetable dishes
  • Hot sauces
  • Soups
  • Pastry products
  • Bread and dough products
Who is it for?

If you're enthusiastic about food and want to gain qualifications by combining employment, training and studying at the same time, this course is for you.

How Is this course assessed?

You are assessed throughout your course in College and the workplace on a 50/50 basis by our highly trained staff while your skills develop. You will need to complete a small exam for the Functional Skills part of the course.

What could I do next?

On successful completion of the course the natural progression would be completing the Level 3 NVQ Diploma in Professional Cookery. This will give you a broader range and quality of skills whilst gaining a greater understanding of the industry at a supervisory level.
