Professional Cookery

Photo: A professional cookery apprentice at work in a restaurant kitchen.Food processing and cooking involves preparation and cooking of meat, fish, poultry, sauces, soups, vegetables, doughs, desserts and pasta. You will also learn the importance of hygiene, effective teamwork and maintaining food safety. You will be able to choose the units which best represent your individual job roles.

What will I learn?

The delivery of the course will be a combination of theory sessions which will develop your knowledge and understanding. Practical sessions will enable you to learn and practice your skills in our fully equipped kitchens at College and also in your workplace with an assessor.

In addition to this, the course also offers Key Skills certificates in Communication and Application of Number which are essential for all jobs, enabling you to become more flexible and adaptable within the workplace.

What do I need?

An excellent record of attendance and punctuality is essential. Plus employment as an apprentice with an employer for a minimum of 16 hours per week.

Level 2 – 3 GCSEs at grade D or above.

Level 3 – NVQ Level 2 in Professional Cookery or food processing and cookery. Key Skills Application of number and Communication Level 1.

How long is the course?

1 year in conjunction with a suitable work placement.

How will I know how I’m doing?

There are no end of course examinations, however, you will be continually assessed on your skills, knowledge and on completion of a portfolio containing evidence of your work. Assessments are carried out in College and in your workplace.

You may be required to take an exam for Key Skills, this would depend on your GCSE results.

How will this help me in the future?

On successful completion of the course the natural progression would be a higher level course or employment, giving you a broader range and quality of skills and understanding of the industry.
