Craft Bakery

Photo: A selection of artisan breads.The craft of baking provides us with one of our basic foodstuffs, bread, as well as all sorts of delicious extras.

This course is your first step to becoming a craft baker – a traditional and skilled craft you can be proud of. Craft bakers are skilled craftsmen who use traditional baking techniques such as fermented dough to develop flavour and texture, and also oven-bottom baking as part of the process to produce handmade breads, pastries and confectionery.

What will I learn?

This course covers all the aspects of craft bakery and reflects the different processes, stages and departments within a bakery. If you are passionate about using the finest ingredients, want to learn how to create artisan products and are keen to keep this interesting and traditional skill alive, the craft bakery apprenticeship is the right course for you.

You will learn all about the practical and theory of preparing and producing craft bakery products. You will also learn the importance of hygiene, food safety and health and safety standards along with the benefits of working with others and good team development. In addition you will gain Key Skills qualifications.

What do I need?

  • 2 GCSEs at grade D or above
  • Employment as an apprentice with an employer for a minimum of 16 hours per week
  • Total commitment, enthusiasm and motivation
  • Record of achievement showing an excellent attendance and punctuality report
  • Personal interview.

How long is the course

The course comprises of day release in College in conjunction with full time employment with an approved employer and should be completed in 12 and 18 months.

How will I know how I am doing?

You will be continually assessed and supported in College and at your workplace and will also complete a portfolio containing evidence of your work. You may have to take tests for Key Skills.

How will this help me in the future?

You may be able to progress on to the Level 3 Food Preparation and Cooking course which will further develop your skills and understanding of the industry, opening a wide variety of employment opportunities.

Career progression opportunities are excellent, possibly to develop your own business or to progress through management in national companies.
