Culinary Skills Level 2 City of Bristol College

This two-year, full-time course will give you professional cookery specific skills and knowledge.

It will prepare you to work in commercial kitchens. When you complete the course, you will be ready to continue your professional kitchen training and career development to a higher level, should you wish to do so.

This course for school leavers aged 16-18.

Who is it for?

This course is for people aged 16-18 and who want to develop their cooking skills. It is suitable for people who want to build a career in hospitality and have some relevant experience.

What you'll learn

You will develop a range of practical kitchen and front of house skills. You will gain the knowledge you need to produce a full-range of products. Alongside this, you will learn to work at the high professional standards required in a commercial setting.

For example, you will learn how to prepare and cook stocks, soups and sauces, meat and offal, fish and shellfish. You will be able to produce biscuits, cakes and sponge products and fermented dough products. When you complete the first year of this course, you will get a Level 2 Culinary Skills Award. You can then progress onto year two of the course where you can achieve your Level 2 Culinary Skills Certificate. On the second year of the course, you will develop your knowledge include more in-depth cooking skills.

Entry requirements

To join this course, you need to have grade 3 (D) and over or equivalent. However if you are below the requirement, tutors will assess your suitability for the course through an informal interview.

It is not essential, but if you hold a Level 1 Certificate in Catering and Hospitality or another relevant qualification or have completed one year’s relevant experience working in an establishment which prepares and cooks fresh food, this may be to your advantage.

How is the course delivered and assessed?

This is a highly practical course, although you will also gain essential knowledge through some classroom learning. The majority of your practical learning will take place in our professional training kitchen and commercial restaurants at both College Green Centre and our South Bristol Skills Academy.

You will have opportunities to connect your technical learning with real-life and through work experience. You will be assessed through small tests after every unit throughout the year which are both written and practical.

Future career and study opportunities

When you complete the first year of this course, you could progress onto the second year for a Level 2 Certificate.

Alternatively, you could progress your learning and extend your career prospects by joining a specialised or higher-level course, for example in Professional Cookery or Food and Beverage Service which will be assessed on a case-by-case basis.

You might prefer to seek an apprenticeship to continue your training while working, or you could go directly into employment.

Additional costs

You will be required to purchase a kitchen and front of house uniform as well as a kitchen knife set, which costs approximately £210.

If you are on a limited income, you may be eligible to receive help with these costs from our Learner Support Funding Bursary.

Blended learning

To achieve this, most of our courses will include sessions taught at the college supported by online learning to help you reach your full potential.
