This one-year, Professional Cookery Level 3 Technical Diploma course is designed to help you further your cookery career.

This course is a progression option for students who have completed the Level 2 Professional Cookery course or an equivalent course.

It is designed for people looking for employment with higher level of responsibility or at a more prestigious establishment.

This qualification will help you develop skills and techniques to produce dishes, enabling you to undertake a variety of roles within a kitchen.

Who is this course for?

This course is a progression option for students who have completed the Level 2 Professional Cookery course or an equivalent course and who are already working in professional cookery.

You should be employed in a commercial kitchen for 30 hours each week or more and ready to progress to the next level.

What you'll learn

You will develop advanced technical skills and professional knowledge, learning how to prepare, cook and finish complex fish, meat, poultry and vegetables dishes, and how to prepare, cook and finish hot and cold sauces and desserts.

You will also gain an excellent understanding of how to maintain food safety when storing, preparing and cooking food.

Course entry requirements

To join this course, you need to have a Level 2 qualification in Professional Cookery and you should be working in a commercial kitchen for at least 30 hours a week.

5 x GCSE’s at grade C/4 or above including English Language, and Maths.

For STEM subjects can be more specific e.g. Engineering – 4 x GCSE’s at grade C/4 or above including English Language, Maths and science. Science and/or maths must be grade 5.

Alternatively, a BTEC Level 2 in Engineering (overall Grade Merit) with Merits in the Mathematics and Science units, and GCSE grade C/4 in both English Language and Mathematics.

We will invite you to a course information meeting event where you will receive information, advice, and guidance about the course you have applied for. This will be an opportunity for you to gain valuable information about the course and give you the opportunity to ask any questions you may have.

You will need to provide a copy of your last school report and / or a reference from an employer or relevant professional, this will include attendance. This is to ensure we can support you to be able to achieve well on the course.

Applicants with 85% or below attendance will have been deemed not to have met this criteria. All applicants are given an opportunity to discuss any evidence- based mitigating circumstances that may have affected the reference / school report.

How is the course delivered and assessed?

This is a highly practical course so the majority of your learning will take place in our professional training kitchen.

You will learn through demonstrations and practical activities, supported by theoretical sessions.

Future career and study opportunities

When you complete this course, you will be qualified to work as a professional chef in a wide range of establishments.

The position and level you work at will depend on the size and type of venue and your career aspirations.

For example, you may choose a role where you can develop your skills in a particular area, such as pastry or French cuisine, you may wish to gain experience working at a high-end restaurant, or you might prefer to work at a gastro pub, country hotel or high street restaurant.

If you want to progress your career through further learning, there are a number of university level courses and Higher Apprenticeships which you could consider for example, in Professional Cookery, Culinary Arts Management and Food and Beverage Management.

Additional costs

You will need chef whites, safety shoes and knives. If you are on a limited income, you may be eligible to receive help with these costs from our Learner Support Funding Bursary.
