This one-year, full-time course is designed to help you further your cookery career. It is designed for people looking for employment with higher level of responsibility or at a more prestigious establishment. This qualification will help you develop skills and techniques to produce dishes, enabling you to undertake a variety of roles within a kitchen. This qualification will help you prepare, cook and present dishes to a high standard in a professional kitchen.
Who is it for?
This course is for young people aged 16-18 and adults aged 19 and over who have completed a Level 2 Cookery course and who are already working in professional cookery. You should be employed in a commercial kitchen for 30 hours each week or more and ready to progress to the next level.
What you'll learn
You will develop advanced technical skills and professional knowledge, learning how to prepare, cook and finish complex fish, meat, poultry and vegetables dishes, and how to prepare, cook and finish hot and cold sauces and desserts. You will also gain an excellent understanding of how to maintain food safety when storing, preparing and cooking food.
To join this course, you need to have gain the Level 2 qualification in Professional Cookery and you should be working in a commercial kitchen for at least 30 hours a week. You need GCSEs in English Language at grade 4 (C) or above, maths at grade 3 (D) or above plus a range of other GCSEs at grade 3 or above.
How is the course delivered and assessed?
This is a highly practical course so the majority of your learning will take place in our professional training kitchen. You will learn through demonstrations and practical activities, supported by theoretical sessions.
Future career and study opportunities
When you complete this course, you will be qualified to work as a professional chef in a wide range of establishments. The position and level you work at will depend on the size and type of venue and your career aspirations. For example, you may choose a role where you can develop your skills in a particular area, such as pastry or French cuisine, you may wish to gain experience working at a high-end restaurant, or you might prefer to work at a gastro pub, country hotel or high street restaurant. If you want to progress your career through further learning, there are a number of university level courses and Higher Apprenticeships which you could consider for example, in Professional Cookery, Culinary Arts Management and Food and Beverage Management.
You will need chef whites, safety shoes and knives. If you are on a limited income, you may be eligible to receive help with these costs from our Learner Support Funding Bursary.
